Thai Chicken Curry

Do I have any curry lovers reading this? I’ve recently become mildly obsessed with Thai curry dishes so here’s a rendition of my Thai curry sauce πŸ™‚


  • Fresh veggies (sliced up) – red potatoes, red peppers, green peppers, yellow peppers, carrots, mushrooms (your choice)
  • 1 chicken breast (2 if you want a lot of chicken)
  • 1 can creamy coconut milk
  • 1 Tbsp. red curry paste
  • Dash of paprika
  • Dash of chili powder
  • Dash of cayenne
  • Dash of salt & pepper


  • In a large skillet, brown the chicken breast
  • Add fresh veggies and lightly grill
  • Stir in coconut milk, red curry paste, chili powder, cayenne, and salt and pepper
  • Simmer covered for 20 minutes or until chicken and vegetables are tender
  • Serve over rice noodles or brown rice
